
Ingredients
- 3/4oz (22ml) fresh lime juice
 - 1oz (30ml) simple syrup
 - 6 mint leaves
 - 1 & 3/4oz (52ml) London Dry style Gin (I love Tanqueray but use whatever you like)
 - 1 oz homemade ginger beer (more like a ginger syrup) or replace with carbonated ginger beer, but you're missing out.
 - Optional 1-3oz (30-90ml) of Soda water
 - Garnish - Mint sprig
 
- Add mint and simple syrup to a mixing tin and lightly muddle.
 - Add the rest of the ingredients and shake over ice.
 - Double-strain into an iced collins glass.
 - Top with soda (omit the soda if you're using off the shelf carbonated ginger beer)
 - Garnish with a mint sprig
 
Ingredients:
- 1 cup water
 - 2 tablespoons grated or chopped fresh ginger
 - ½ teaspoon fresh lime juice
 - 1 teaspoon brown sugar
 
- Peel ginger then grate or finely chop.
 - Ginger is really fibrous so can easily clogs graters. I used a chopping setting on my food processor with good results. Quick and easy.
 - Boil water then remove from heat
 - Add ginger and lime juice
 - Cover and let stand for 1 hour
 - Stir, and strain through a fine mesh sieve, pushing down on ginger solids to express ginger extract.
 - Add sugar and stir.
 - Bottle and refrigerate
