Bee's Knees

This is my current favorite drink. It's another simple twist on the Gin Sour, with the Bee's Knees swapping Simple Syrup for Honey Syrup.




Ingredients:
  • 2oz (60ml) Gin
  • 3/4oz (22ml) Honey Syrup*
  • 3/4oz (22ml) Lemon Juice (must be fresh juice)
  • Egg White (optional, but highly recommended)
  • Garnish - Lemon peel or none
  • Glass - Cocktail 
 *Honey Syrup
  • Mix equal parts hot water and honey
  • Stir and leave to cool
Instructions:
  1. Chill the glass the drink is being served in.
  2. (Optional step if adding egg) Add all ingredients into to a mixing tin without ice and shake. This step (called a Dry Shake) helps to emulsify the egg which will make for a smooth and foamy drink.
  3. Shake all ingredients over ice.
  4. Double-strain into a chilled cocktail glass.
  5. Garnish with a lemon peel or nothing at all.
Notes
I always thought that adding raw egg to a drink sounded like a super gross idea, but actually it's great! There are almost no health risks with egg white and even if there was, you're pairing it with a bunch of alcohol. The result was a drink so smooth and sweet that I couldn't even taste the gin. We tried it with and without the egg and with egg was the clear winner, as without it the gin taste was quite strong. Give it a go!
