
Ingredients:
- 2oz (60ml) Light Rum.
- 8-12 Mint leaves
- 3/4oz (22.5ml) lime juice
- 2 Strawberries (halved)
- 1 oz (30ml) Simple Syrup made from white sugar
- 1 oz (30ml) Soda (or to taste)
- Garnish - whole strawberry
- Add simple syrup and strawberries to a shaker.
- Muddle until the berries are well broken up.
- Add mint, rum and lime juice
- Shake over ice and double-strain into an iced collins glass.
- Add 30ml (or to taste) of soda water
- Gently Mix with bar spoon
- Garnish with a strawberry
